Easy Cheesy Chicken Enchilada Soup

This soup is perfect for those hectic nights when you want something super comforting but super quick!  Since it's made mostly from canned ingredients means you won't have much cleanup either :)



  • 2 cans condensed cream of chicken soup (regular or low fat version can be used)
  • 1 (10 oz) can enchilada sauce
  • 2 cups milk
  • 1 c shredded cheddar cheese, regular or reduced fat
  • 2 cups shredded rotisserie chicken
  • 1 tsp cumin
  • 1 tsp chili powder
  • crushed tortilla chips
Place all ingredients except tortilla chips in a large sauce pan.  Heat over medium heat until the cheese is melted and ingredients are incorporated.  Serve and top with crushed tortilla chips.
