Chia Seed Jam

Jam so simple plus it packs a nutrition punch.  Chia has tons of omega 3 fatty acids and beneficial minerals.  Not to mention they keep you full since they are packed with protein and fiber!  To make it even easier this jam requires no pectin and is low in sugar! 

You'll Need:
  • 4 cups chopped berries or stone fruit
  • 1/4 cup sugar
  • 1/4 cup chia seeds
  • 2 tbl water
Wash and prepare your fruit and place it in a large stock pot.  Sprinkle with sugar and chia and add in water.  Place heat on medium/low and stir until sugar melts.  Allow to simmer on low for 20-25 minutes or until the fruit breaks down and is soft.  This will be the point in time the jam starts to get thick.  Once fruit has lost its shape and is more of a "jam" like consistency remove from heat.  Store in an airtight container.  Mason jars or old jam containers work well here too!  Store in the fridge as you would any jam.
