Taco Stuffed Tomatoes

The end of summer produces the best tomatoes. Here's a taco recipe that's a bit out of the box. It has all your taco fix ins but no shell!

Ingredients:

  • 5-6 med size tomatoes
  • 1/2 lb ground beef
  • 1 15oz can black beans
  • 3/4 cup corn
  • 1 sm onion
  • 1 cup shredded Cheddar
  • taco seasoning packet or homemade taco seasoning
  • panko bread crumbs
  • cilantro


Preheat oven to 350. Cook ground beef in medium size pan until done. While beef is cooking, hollow out tomatoes removing seeds & ribs (be careful here, try not to puncture the tomato). Add in onion and saute until tender. Add in corn, black beans and taco seasoning. Now its time for stuffing, stuff each tomato with beef mixture. Top with shredded cheddar and a sprinkle of panko for some crunch. Bake just until cheese melts, about 15 minutes. Not really cooking here as beef is already cooked. Garnish with cilantro.

I served this with nachos and salsa....homemade with more tomatoes of course!
