I love a thick cut steak smothered with mushrooms and onions....with a little crumbled blue cheese. But lets face it, it isn't exactly low in calories. Here is a great alternative that leaves you satisfied without feeling weighed down.

Ingredients:
- 1 lb beef eye round, sliced very thin
- 1 onion, sliced
- 1 small package mushrooms, sliced
- cherry tomatoes
- 6 oz arugula and romaine mix
- 1/4 cup blue cheese
- salt & pepper
- olive oil for drizzling
Heat large skillet over medium to high heat and drizzle a little olive oil in pan. When the pan is hot saute the mushrooms and onions until browned and the onions are slightly caramelized. Remove from the pan and reserve on a plate. Place the steak into the pan and cook on high heat about 2 minutes per side. The steak will cook quick since it is cut thin. Remove from pan to stop the cooking. Place arugula and romaine salad on a place and drizzle with olive oil and season with salt and pepper. Serve the steak over the arugula and romaine salad and place the mushroom and onion mixture on top. Sprinkle with blue cheese before serving.
