Crunchy Crumb Haddock



Some think that cheese and fish don't pair well but I find this recipe to be perfectly paired :)  You could substitute the cheddar cheese for Parmesan cheese and it would be just as delicious.

Ingredients:

1 lb haddock or cod
3/4 cup panko bread crumbs
2 tbl butter, melted
1/3 cup shredded cheddar cheese
2 tbl mayonnaise
dash of lemon juice
dash of hot sauce (optional)
1 tsp parsley


  1. Preheat oven to 425 degrees.  
  2. Place fish in baking dish and spread the mayonnaise evenly over the fillets.  
  3. In a small bowl, mix the cheddar cheese, breadcrumbs and parsley.  Sprinkle evenly over the fish and drizzle the melted butter over the top.
  4. Add a dash of lemon juice and hot sauce over the top and bake about 14 minutes or until fish flakes easily with a fork.

  1. Looks delightfully yummy! Do you ever substitute panko for breadcrumbs? So crunchy!
