Creamy Zucchini Casserole

Everyone will love this casserole....even kids!  It's creamy and cheesy so whats not to like?  

You'll Need:
  • 4 medium zucchini or summer squash (or a mixture of both), thinly sliced into discs
  • 1 onion, chopped
  • 2 carrots, grated
  • 2 cloves garlic, chopped
  • 1 can condensed cream of mushroom soup
  • 1/2 cup plain yogurt
  • 4 tablespoons butter
  • 2 cups seasoned stuffing mix
  • 1 cup Parmesan cheese
Preheat oven to 350 degrees.  In a large saute pan melt 2 tablespoons of butter and saute the veggies with the garlic until slightly tender.  In a large bowl, mix the condensed soup, yogurt, 1/2 cup parm cheese and 1 1/2 cups of the stuffing mix.  Gently fold in the zucchini mixture.  Pour into a 13x9 inch pan and spread evenly.  Melt the remaining 2 tablespoons of butter and mix with remaining 1/2 cup stuffing mix and 1/2 cup parm cheese.  Sprinkle on top of the zucchini mixture and bake for 30 minutes.
