Cool as a Cucumber Smoothie

Beat the heat with this refreshing smoothie!  Delicious for breakfast or light lunch when its too hot to think of anything to prepare.  

You'll Need:
  • 6 oz plain or vanilla yogurt
  • 1/2 cup milk (soy, coconut or almond milk will work too)
  • 1 tbl lime juice
  • 1 tbl honey
  • 1 cucumber, chopped
  • 1/2 cup fresh fruit (whatever you have on hand)
  • 2-4 mint leaves (optional)
  • 1 tbl chia seed (optional)
Place all ingredients in a blender and blend until thick and creamy.
