These, for me, are the ultimate stuffed burger. The fun thing about creating a stuffed burger is you can stuff it with pretty much anything you like. Since they are mini you may want to use a few different stuffings....Go ahead and experiment!
- 1 1/2 lb ground beef
- 1 - 2 jalapeno, seeds and ribs removed, finely diced
- Shredded cheddar cheese
- 4 sliced cooked bacon, crumbled (or use real bacon bits)
- sliced pepper jack for topping (if desired)
- sliced tomatoes for topping (if desired
- Slider buns
With your beef make medium to large size meatballs, set aside. Mix the cheddar, jalapenos and bacon together. Make an indentation in the meatball with your thumb and form a spoonful (about a teaspoon or as much as you can stuff) of the cheddar mixture and place it into the indentation. Fold over the meat so the cheddar mixture is covered and press flat to form a small pattie. Continue with remaining meatballs. Grill on medium high heat for about 2 minutes per side. Add desired toppings and sandwich between slider buns...serve up!
