Mini Cinnabon French Toast

These little bites are so quick and simple to whip up for kids in the morning.  I try to limit the sugar intake for my 4 year old but a little usually sneaks in :)  This is the perfect balance because kids will get their protein from the egg but a little sweetness from the cinnamon sugar!

  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla
  • 4 slices bread
  • 2 tbl cinnamon sugar
  • butter
Roll out the bread with a rolling pin so it is thin.  Spread bread with butter and sprinkle each slice with 1/2 tablespoon of cinnamon sugar.  Beat the eggs with the 1/4 cup milk and vanilla.  Roll up the bread slices (as you would a cinnamon roll) and dip in the egg mixture.  Place into buttered skillet seam side down and brown on all sides.  Remove from skillet and slice on a diagonal to make your mini cinnabons!
