DIY Cream Filled Chocolates

Surprise your Valentine with these homemade cream filled chocolates.  Just like the ones from the box but even better!  Control the quality and flavor of the chocolate and fillings for these decadent bites.  Gift them in a Valentines box and you will be loved :)

To make these a little fancy you can use a candy mold.  They are found at any craft store or are available online. 

Cream Filling:
  • 2 sticks butter
  • 4 cups confectioners sugar
  • 2 - 3 tbl milk
  • 1 tsp flavor extract
    • vanilla
    • strawberry 
    • rum
    • orange
    • peppermint
  • food coloring (optional)
With an electric mixer beat the butter with the sugar and add in the milk 1 tablespoon at a time.   Be sure the mixture isn't too wet because it will not hold shape. Add in your flavor extract and food coloring if desired. 

Chocolate
  • Your favorite chocolate ( I like to use the melting discs because they are easier)
    • white chocolate
    • dark chocolate
    • milk chocolate
 If you are using a candy mold have them ready next to where you will be preparing the chocolate.  Melt the chocolate over a double boiler until smooth.  Spoon in a small amount of chocolate into the base of the mold and allow to set.  Drop a small amount of cream filling on the top of set chocolate.  Finally spoon more chocolate over the top of the filling until it fills the mold to the top.  Allow to set completely.

If you are not using a mold roll the cream filling into tablespoon size balls and place onto a baking sheet.  Allow to freeze for about 1 hour.  Remove from freezer and gently roll the cream filling balls into the melted chocolate.  Place back onto baking sheet to allow to set. 

For both options, once finished take a spoon of chocolate and drizzle over the top of the chocolates for an added decorative touch!
