Crock Pot French Onion Soup

Fall is approaching...and we are getting geared up with lots of comfort foods for our readers! Here is a savory soup that I love to have ready before Thanksgiving dinner. It's so simple to set it in the crock pot and let it cook all morning....

You'll Need:

Soup:
  • 3 large onions, sliced (3 cups)
  • 3 tablespoons butter, melted
  • 3 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 4 cans (14 1/2 ounces each) ready-to-serve beef broth 
  • Cheesy French Breaad:
  • 8 slices French bread, 1 inch thick
  • 2 tablespoons grated or shredded Parmesan cheese 
  • Butter
  • For top:
  • 3/4 cup shredded mozzarella cheese (3 ounces)

  • Directions:
    • Mix onions and butter in 3 1/2- to 6-quart slow cooker.
    • Cover and cook on high heat setting 30 to 35 minutes or until onions begin to slightly brown around edges.
    • Whisk flour, Worcestershire sauce, sugar and pepper. Stir flour mixture and broth into onions. Cover and cook on low heat setting 7 to 9 hours (or high heat setting 3 to 4 hours) or until onions are very tender.
    • Prepare Crispy French Bread by buttering the bread slices, and spreading parmesan on top, then baking @ 425 for 5-6 mins. Place 1 slice bread on top of each bowl of soup. 
    • Pour into a oven-safe bowl/crock, place bread on top, then generous mozzarella cheese, and broil for 5-6 minutes. Serve immediately!

    3. Made this last night along with the Oven Fries (we had steak). Fantastic! Don't all recipes call for adding salt? Do not be tempted here. Smooth, comforting full flavor. The cheese topper could be switched out for Swiss or whatever you may have on hand. This soup is added to our Recipe Stable. Thanks Sizza!
