Grilled pizza is so delicious and surprisingly easy to do. Contrary to what it appears, your dough will not stick to the grill grates. As the dough begins to cook it will lift so it will be easy to flip!
Ingredients:
- 1 ball of pizza dough (store bought or try this homemade version )
- 2 large beefsteak tomatoes
- 6 oz fresh mozzarella
- handful of fresh basil leaves
- salt & pepper
- extra virgin olive oil for drizzling
Preheat grill to medium heat and brush grates of any debrit. While the grill is preheating prepare your toppings. Slice tomatoes and mozzarella into 1/4 inch slices and place onto a plate with the basil. Once grill has preheated lower one side of the grill to medium - low heat. Separate dough into 3 or 4 balls and flatten them out onto a floured surface with your hands (use a roller if you need to but I like the look of a rustic, uneven pizza). You want to dough to be about 1/4 inch thick. Place each dough onto the medium heat side of the grill with the lid open. The dough will be ready to flip after about 7 minutes, depending on how dark you like your crust. Gently lift the dough with tongs, it should easily come off the grates. Flip the dough and place onto the side on low heat. Place your toppings on and cover the grill. Allow to cook for about 10 minutes checking periodically. Garnish with extra basil and a drizzle of olive oil!
