Frozen Strawberry Cheesecake Balls

Not only are these delicious but they are portion controlled!  They are the perfect Summer treat - cool, creamy and no utensils required!  


You'll Need:
  • 1 8 oz package of light cream cheese
  • 4 medium size strawberries, cored and diced in half
  • 1 tsp vanilla
  • 2 tbl confectioners sugar
  • 1 cup graham cracker crumbs

Place cream cheese, vanilla and confectioners sugar in the food processor and pulse until combined.  Add in the strawberries and pulse until finely chopped being careful not to over pulse.  Using 2 spoons, spoon out about 1/2 tablespoon of the mixture and form into a ball with the 2 spoons (the mix will be very soft but once its coated in the graham cracker crumbs it's easier to work with).
   

 Drop the balls into the crumbs and using another spoon gently coat the ball.  Place onto parchment lined baking sheet.  Repeat for the rest of the mixture and place into freezer until frozen.
