Coconut Lime "Fried Rice"

If you haven't tried this swap out for rice you don't know what your missing!  No, it won't taste just like rice but you will not miss it...especially when you add in flavor!
You'll Need:
  • 1 medium head cauliflower (don't substitute for frozen)
  • 3/4 cup sweetened coconut
  • 1 clove garlic, chopped
  • 1/4 cup lime juice
  • 2 scallions chopped (if desired)
Begin by washing and coring your cauliflower.  Place into food processor and pulse until it has reached "rice" like texture.  Heat a drizzle of olive oil in a large skillet over medium heat.  Place cauliflower in the pan in a thin layer so it is able to "fry".  Saute until cauliflower has begun to brown just slightly.  Stir in the coconut and garlic and saute for 2 minutes.  Add in lime juice and scallions and serve!
