Shaved Brussel Sprouts with Bacon & Parm



This makes a delicious, healthy side dish to any meat or fish.  I served baked cod on top of this colorful salad!

You'll Need:
  • 1 lb fresh brussel sprouts
  • 1/4 c real bacon bits
  • 5 shallots, chopped
  • 1 garlic clove, chopped
  • 1/2 cup shelled edamame
  • 1/4 c Parmesan cheese
  • salt & pepper
Begin by trimming the stem of the brussel sprouts.  Place into food processor and pulse slowly until finely shaved.  Warm a large skillet over medium heat and drizzle with olive oil.  Saute the shallots and garlic for 1 minute.  Add in the brussel sprouts and saute for about 5 minutes or until they just begin to brown.  Add in the bacon bits, edamame and parm cheese and cook another 3 minutes.  Season with salt and pepper .
