Pineapple Salsa Verde

Salsa Verde is simply green salsa made from tomatillos.  They look like green tomatoes wrapped in paper but are a bit tart but totally delicious.  Here is a quick salsa that incorporates fresh pineapple and veggies from the garden!

Ingredients:
  • 7 - 8 tomatillos
  • 1 cup chopped pineapple
  • 1/2 pepper, chopped (any color)
  • 1 small red onion
  • 1 clove garlic, smashed
  • 1 jalapeno (jarred or fresh), chopped
  • 1/4 cup lime juice
  • handful of fresh cilantro
  • 2 tbl extra virgin olive oil
  • salt & pepper to taste
Peel, wash and quarter tomatillos.  Place in a food processor with everything except lime juice, olive oil and salt & pepper.  Pulse until chunky or until it has almost reached desired consistency.  Pour in lime juice and drizzle in olive oil and pulse.  Finally add in the salt & pepper and do a quick pulse.  Place in a covered bowl and store in the fridge for a few hours just to let the flavors marinate.  Serve with chips or over grilled chicken or seafood!
