Farro Pilaf with Raisins & Apples

If you haven't tired farro you don't know what your missing!  It is a delicious alternative to rice and is so much healthier.  It is a whole grain and has lots of protein so it keeps you full!  Here is a wonderful light side dish or you could have it as a salad if you top with some arugula!


You'll Need:
  • 1 /2 cups cooked farro (follow package instructions)
  • 1/2 medium size apple, finely chopped
  • 1/2 cup raisins
  • juice of  of 1/2 lemon
  • 2 tbl olive oil
  • 1/4 cup cubed cheddar cheese
  • 1/4 cup slivered almonds (optional)
  • 2 tbl chives
  • salt & pepper
Place all ingredients in a large bowl and mix well.  Allow to sit for 15 minutes just so flavors can come together.
