Homemade Fortune Cookies

New Years Eve is big for Chinese take-out but there always seems to be a shortage of furtune cookies in the bag.  Be sure everyone gets a fortune with these easy homemade fortune cookies!

Ingredients
  • 2 egg whites
  • 1 tsp vanilla
  • 1/2 cup flour
  • 1/2 cup sugar
  • small strips of paper for fortunes
Preheat oven to 400 degrees and line baking sheet with parchment paper.  Write out fortunes on small strips of paper no larger than 3 inches long.  Beat the egg whites until foamy but not until they have become stiff.   Gently mix in the other ingredients until combined.  Drop a teaspoon of batter onto the cookie sheet and spread in a thin circle until about 3 inches in diameter.  Continue for remaining cookies but work in small batches so you will have time to form the cookie before cooling once it is removed from the oven (start with 3 or 4 cookies at a time).  Bake for 5 minutes.

Remove from oven and place the fortune into the center of the cookie.  Gently remove cookie with a spatula and fold in half.  Finally crimp the cookie bringing the 2 sides of the cookie together to form your fortune cookie.  Allow to cool and set (takes about 30 seconds).
