Bacon and Cheddar Stuffed Mushrooms

Stuffed mushrooms is always my go to appetizer.  For my last batch I didn't have many ingredients on hand....but I did have bacon and cheddar cheese.  These mushrooms were heavenly!

  • 1 (16 oz) package mushrooms
  • 6 slices of cooked bacon
  • 1/2 onion
  • 1 jalapeno
  • 2/3 cup cheddar cheese
  • 1/2 cup bread crumbs
Preheat oven to 350 degrees and line baking sheet with foil.  Clean mushrooms from any visible dirt with a clean dish towel and remove the stems.   Place the stems and remaining ingredients besides bread crumbs into a food processor and pulse until finely chopped.  Pour into a bowl and stir in bread crumbs.  Stuff mixture into mushroom caps and place on baking sheet.  Bake for 20 minutes.
