Snickerdoodle Cupcakes


Ingredients:
Vanilla Cake Mix
1/2 tsp salt
Cinnamon, 1 tsp + 1 tsp separate
Sugar, 1/3 cup
Cream cheese frosting- store bought (1 can) or recipe below

1. Combine sugar and 1 tsp Cinn, set aside.

2. Make cake mix according to directions, however add 1 tsp Cinnamon & Salt into the dry mixture first. Before baking, sprinkle each cupcake top with Cinn & Sugar. Bake as directed.

3. When completely cool, frost cupcakes (to get the look shown here, use a pastry bag with the coupler only- no decorating tip. Let the frosting build up in the center then swirl up, in one continuous motion.)

4. Sprinkle generously with Cinn & Sugar.

Cream Cheese Frosting

Ingredients:
2 sticks butter, softened
Two 8-ounce packages cream cheese, softened
1 tablespoon vanilla extract
2 cups confectioners' sugar

In a large bowl, using an electric mixer, beat the butter and cream cheese at high speed until light, about 5 minutes. Beat in the vanilla, then the confectioners' sugar; beat at low speed until incorporated. Increase the speed to high and beat until light and fluffy, about 3 minutes.
