Roasted Garlic, Artichoke + Parmesan Dip

This dip makes any old weeknight so much better. I can't get enough! Hope you enjoy this savory creation. Feel free to add sauteed spinach if you'd like.

You'll Need:
1 can (14 oz.) artichoke hearts, drained, chopped
1 cup Freshly Grated Parmesan Cheese
1 cup Mayo
1 clove  garlic, minced
1  green onion, sliced
2 Cups shredded mozzarella or gouda blend
Pre-heat oven to 350ºF.

Mix all ingredients, leaving 1 cup of shredded mozzarella blend, and the sliced green onions.
Spoon mixture into shallow ovenproof dish or 9-inch pie plate.Sprinkle remaining 1 cup of mozzarella blend on top.
Bake for 25 min. or until hot and bubbly. Sprinkle with green onions. 

Serve with pita chips, crostini, or tortilla chips...

 My mouth is watering just typing out the ingredients!
