Mini Peanut Putter Blossoms

I don't know whats better about these cookies, the fact that they have only 5 ingredients or that they have around 40 calories a piece!  They are just like the larger version with Hershey kisses but downsized into cute little blossom buttons :)

  • 1 cup peanut butter
  • 3/4 cup packed brown sugar
  • 1 egg
  • 3/4 tsp baking soda
  • chocolate chips

Preaheat oven to 350 degrees and line baking sheets with parchment paper.  With a mixer, beat all ingredients together in a large bowl.  Using a teaspoon, drop small rounds of dough onto the prepared cookie sheet and bake for 8 minutes or until lightly browned around the edges.   Remove from oven and gently press a chocolate chip into the center of the cookie.  Transfer to a wire rack and cool completely.

  1. I made these last night. A teaspoon is too big. I had to add 3-4 chips per cookie to get the chocolate taste to mix with the peanut butter. Otherwise, so easy and tasted amazing.
