Quinoa Tabbouleah

Tabbouleah is delicious as a side dish or as an appetizer along with hummus and pita chips.  Traditionally made with bulger, which is also packed with healthy protein and fiber, however this version made with quinoa is gluten free!

  • 1 cup dry quinoa
  • 1 pinch salt
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • pepper to taste
  • 1/4 cup lemon juice
  • 3 tomatoes, diced
  • 1 cucumber, diced
  • 2 bunches green onions, diced
  • 1 cup fresh parsley, chopped
  • feta cheese, to taste
  • fresh mint, to taste
  1. Cook quinoa according to package instructions.  Set aside and allow to cool completely.
  2. In a large bowl mix together all remaining ingredients.  Add in the cooled quinoa and mix well until combined.
