Slow Cooker Barbacoa Pork - THE Universal Shredded Pork!

This Mexican shredded pork is so deliciously sweet without being too sugary.  It is so versatile, it will work for burritos and burrito bowls or tacos to sliders and pulled pork sandwiches. Place all the ingredients in the slow cooker in the morning and come home to a yummy meal.  This is really worth serving up!

Ingredients:
  • 3 lb pork loin roast, trimmed of most fat
  • 8 oz coke
  • 1/2 cup brown sugar
  • 6 oz can diced green chilies
  • 8 oz tomato sauce
  • 1 - 2 chipotles in adobo sauce (depending on how spicy you like it)
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • salt & pepper to taste
Place all ingredients in slow cooker and cook on low 8-10 hours or on high 4-6 hours.  Shred pork before serving.

Optional add in's to serve along side:
  • sour cream
  • cilantro
  • shredded Mexican cheese or cheddar
  • sliced scallions (green onions)
  • sliced limes
  • corn
  • sliced jalapenos
