Yes, I did just blog about healthy eating on the go BUT I have the Thanksgiving itch and one of my favorite desserts that is only consumed at Thanksgiving is Pecan Pie! If you bake it just right this is to die for!!
- 1 Box refrigerated pie crusts ( I personally like to use Pillsbury)
- 1/3 cup packed brown sugar
- 1 1/2 tsp flour
- 1 1/4 cups light corn syrup
- 1 1/4 tsp vanilla
- 3 eggs
- 1 1/2 cups pecan halves (or pieces or whatever you like)
- 2 tbs melted butter
DIRECTIONS
- Heat oven to 375°F.
- Place pie crust in 9-inch glass pie dish as directed on pie crust box.
- In large bowl, mix brown sugar, flour, corn syrup, vanilla and eggs until well
blended.
- Stir in pecans and butter.
- Pour into crust-lined pie dish.
- Bake 40 - 50 minutes or until filling is puffed and pie is golden brown.
- Cool
completely for about 2 hours then store in the refrigerator.
