Simple Pumpkin Ravioli

You will be surprised how easy these ravioli are.  Using wonton wrappers takes the hassle out of making homemade ravioli.  They are so delicious...serve them as an appetizer or main course!

You'll Need:
  • 1 package wonton wrappers (typically found in the refrigerated produce section of the grocery isle)
  • 1/2 cup canned pumpkin
  • 1 cup ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1 tsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
Mix all ingredients together and begin filling wonton wrappers.  Lay out a wrapper and place about 1/2 tablespoon of filling in the center.  Moisten the edges with water and place another wrapper over the top.  Press firmly around the edge and trim any excess, you don't want too much extra around the filling.  Gently crimp with a fork around the edge and place on parchment lined cookie sheet while you finish the rest. Boil the ravioli for only 3-4 minutes or until they begin to float.  Or for a baked, crispy ravioli preheat oven to 350 degrees and brush with egg and water mixture.  Sprinkle with Parmesan cheese and bake for 15 minutes.

To Serve: Serve with a simple butter and cheese sauce with chopped sage or use Alfredo sauce as a dipper!
