Bacon Wrapped Potato Bites

These little bites couldn't be more easy to put together.  If you are looking to make them more healthful use a turkey bacon or a center cut bacon to cut down on fat.  They make the perfect quick football appetizer!

You'll Need:
  • 1 lb bacon
  • 3 or 4 russet potatoes cut in 1 inch chunks
  • Cheddar dip, salsa or sour cream for serving
Preheat oven to 425 degrees and line baking sheets with foil.  Cut the slices of bacon in half.  Wrap 1/2 a slice of bacon around a 1 inch potato cube and secure with a toothpic.  Continue for remaining potatoes and bacon and  bake for 20 - 25 minutes until bacon is crispy.  Serve with desired dip!
