Tomatoes are a typical topper for burgers but in this recipe they double as a condiment and a bun! You will need utensils for these burgers, but they are a great low carb alternative to a bun!
For the tomato "buns" you'll need:
- 1 large tomato
- flour for dusting
- 1 egg, beaten
- 1/4 cup panko bread crumbs
- any seasonings you like, ie: (basil, oregano, parsley, salt, pepper, grated cheese)
Slice tomatoes to make about 1/4 inch round discs. Using 3 small bowls place the flour in 1, the egg in another then the seasoned bread crumbs in the last. Dust each side with flour then coat with the egg. Finally dredge the tomatoes in the seasoned panko bread crumbs. Drizzle olive oil in a medium size skillet. Pan fry the tomatoes until the panko is crispy. Remove and place a burger in between 2 tomatoes.
