My daughter loved these mashed "potatoes" and she had no idea they were made with mostly mashed cauliflower! They are perfect for satisfying your craving for the full on mashed but without the all the carb guilt :) Plus you get your veggies :)
You'll Need:
- 1 large potato
- 1 (16 oz) bag frozen cauliflower
- 1/4 cup Parmesan cheese
- 1/4 - 1/2 cup milk
- 1 tbl butter
- salt & pepper
Clean your potato well and cook. Save yourself a pot to clean and just cook in your microwave. Pierce with a fork and use "potato" setting in microwave. Meanwhile, defrost your cauliflower in a pot of boiling water, drain. Cube your potato (remove skin if desired) and place into a large bowl with the cauliflower. Beat with electric mixers until combined. Add 1/4 - 1/2 cup milk until desired creaminess. Finally add in the cheese, butter and season with salt and pepper. Beat until mixed (will be somewhat chunky.
