Here's an easy and delish way to make fish. Tastes sorta like a potato chip crust over the fish. You can use the flakes on pretty much any fish you like. I'm a fan of a nice white fish, like cod or haddock. OK so here's what ya do:
- In a bowl put about 1 cup of plain instant potato flakes (about 1 cup per pound of fish, I'd say)
- Season flakes with salt & pepper and any other spices you like (good with chives & parsley)
- Press fillet of fish into the flakes so it gets good & coated
- Fry up in a little olive oil and WALA! Enjoy :)
