Tuck this one away for your St. Patty's Day leftovers....you'll be glad you did!!

- 5 cups leftover corned beef & cabbage, chopped (yes, with the cabbage..you can omit if you like)
- 1 onion, chopped
- 1 pepper, chopped
- 2 cloves garlic, diced
- 4 potatoes, peeled and diced
- salt & pepper
- 1/2 cup beef broth, broth from beef & cabbage or water
- 1 tbl butter or lard
Melt butter or lard in large skillet. Add in onion, pepper and garlic and saute until tender, about 5 minutes. Add in the potatoes and corned beef and cabbage, mix until incorporated. Add in your liquid and bring to a simmer until potatoes are fork tender, about 10 minutes. Season with salt and pepper.
Serve with a fried egg on top or as a side dish with melted cheddar cheese!!
