Egg and Pepperoncini Garden Salad

I like to have a salad a day, and my favorite lately is a combo of veggies topped with hard boiled eggs, hot pepperoncinis and balsamic vinegar (straight, not as a "vinaigrette"). The result is a no-way-this-can-be-bland salad!


Fresh Greens, your choice
Hard Boiled Egg
Garden Tomatoes
Pepperoncini, stem removed and sliced
Celery &/or Carrots, chopped
Roasted Beets, cooled (optional)

Drizzle with a good quality Balsamic Vinegar. Along with the egg yolks, it will create your dressing.
